Wood surfaces are to be resealed or replaced. (Per the PIC, a stainless-steel table is on order to replace the wooden table behind the bar, and more time is needed for a solution for the floor pallets.)

Service appointment was set at the time of inspection. PIC is to use the 3-bay sink for proper sanitizing after washing and rinsing equipment and utensils.

Inspector notes: A container of chowder and a container of beef stew were observed at 48- and 47-degrees Fahrenheit respectively in the large prep cooler. Items were located directly next to a container of hot mashed potatoes that were just previously prepared prior to inspection. Based on time of potatoes placed in cooler next to items, chowder and beef stew were reheated for same day service at the time of inspection.

Per interview of staff, Mashed Potatoes and Meat Pies were placed hot in the large cookline prep refrigerator in covered plastic containers.
