Inspector notes: Proper cooling methods were not used for time/temperature control for safety (TCS) foods. Meatballs were placed refrigerator in containers greater than four inches deep and observed at temperatures 43-50 degrees Fahrenheit. Recently prepared turkey observed in its plastic cooking bag 149 degrees in the walk-in. Meatballs greater than 43 degrees were disposed. Plastic wrap to be removed from turkey to allow it to fully cool.
