Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Food was relocated to another refrigeration unit during time of inspection. The ambient air temperature was observed held at 46 degrees Fahrenheit during time of visit. The pans stored on the top were not tight fitting in the unit. The person in charge rearranged the pans and made them tight fitting during time of inspection. The ambient air temperature dropped to 41 degrees Fahrenheit during time of inspection. Establishment must monitor prep unit.

Display case was taken out of service during time of inspection. Food must not be stored in the prep unit until the ambient air temperature drops to 41 degrees Fahrenheit or below and the internal food temperature is maintained at 41 degrees Fahrenheit or below. Repair services came during time of inspection.
