Inspector notes: Food was observed held at 43-48 degrees Fahrenheit in the small prep unit #2. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per person in charge, food had been in the prep unit since the day prior. Food was voluntarily disposed of (see attached disposal form). The ambient air temperature was observed at 48 degrees Fahrenheit during time of inspection. The ambient temperature was adjusted during time of inspection and was observed at 38 degrees Fahrenheit after adjustment. Food placed in unit after temperature adjustment maintained an internal food temperature of 41 degrees and below. Plastic pans were replaced with metal pans and lids were placed on food. Establishment must monitor food to ensure it stays at 41 degrees Fahrenheit or below. If food is not 41 degrees or below, prep unit must be taken out of service and must be repaired/replaced/adjusted.
