Chicken was observed at 48-49 degrees. Chicken was cooled yesterday. PIC voluntarily disposed of chicken. Proper cooling methods/ how to properly fill out cooling logs with PIC.

The display refrigerator case was observed maintaining an ambient of 47 degrees Fahrenheit. Per PIC, various foods were stocked under 3 hours prior to inspection and some were stocked overnight. The items left in the unit overnight was voluntarily disposed of by person in charge.
