Inspector notes: At the time of inspection, yogurt parfaits and Liquid Egg Whites were observed held at 45 and 47 degrees Fahrenheit respectively. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per the PIC, the yogurt parfaits were recently moved to the unit from a colder refrigerator (Yogurts moved back to colder refrigeration). Due to Egg Whites observed at 47 degrees Fahrenheit and in sliding door refrigerator unit since previous day, Egg Whites were voluntarily disposed of.

Inspector notes: The sliding door cooler in the kitchen area was observed maintaining an ambient temperature of 47 degrees Fahrenheit. Unit was also observed to have gaskets that were in need of adjustment. Use of the unit for storage of Time/Temperature Control for Safety Foods is to be discontinued until serviced/repaired/observed maintaining ambient temperature of 41 degrees Fahrenheit or below.
