Per interview of PIC, Rice was placed in the refrigerator in covered containers prior to food items obtaining an internal temperature of 41 degrees Fahrenheit or below. Lids were removed and food items placed on top shelf and allowed to cool properly. Proper cooling methods were discussed during time of inspection.
