Inspector notes: Proper cooling methods were not used for time/temperature control for safety (TCS) foods. Per interview of PIC, Rice was placed in the refrigerator in covered containers prior to food items obtaining an internal temperature of 41 degrees Fahrenheit or below. Lids were removed and food items placed on top shelf and allowed to cool properly. Proper cooling methods were discussed during time of inspection.
