Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. -No TCS foods observed in the bottom unit of salad station. Cut tomatoes observed at 50 degrees F. on bottom shelf in the Arctic-Air refrigerator. Per interview of staff, tomatoes were cut 1 hour prior to this inspection. Cut tomatoes were moved to a different cold hold unit during this inspection. -Bulky containers observed stored on top shelves/racks in the 1 door Arctic-Air refrigerator and may prevent proper cold air flow circulating in unit. -Service was contacted. Establishment shall not store TCS foods in the salad station and 1 door Arctic-Air refrigerator until both units are able to maintain an CONSISTENT ambient of 41 degrees F. or below.
