Except when combined as ingredients, different types of raw animal foods must be separated from each other during storage by using separate equipment or arranging each type of food in equipment so that cross contamination of one type with another is prevented. PIC relocated all foods stored improperly. Guidance document provided.

Inspector notes: Various foods on the lowest shelf of the single door reach-in was observed held at 44 degrees Fahrenheit. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Unit was observed over stocked and sheet pans were observed potentially blocking air flow. Food on bottom shelf was relocated to walk-in. Bottom shelf to be temped daily to ensure food maintains a temperature of 41 degrees or less.
