Spinach pies observed placed hot in the Continental prep station in plastic containers greater than four inches deep and covered. Spinach pies observed at 84 degrees F. Per interview of staff, spinach pies were prepared less than 30 minutes prior to this inspection. -Proper cooling methods reviewed. -Staff removed the cover and moved the spinach pies to the walk-in cooler to allow for rapid cooling during this inspection. -Establishment will keep a cooling food temperature log for foods in the cooling process. -Cooling food temperature log must be completed and provided to Inspector upon the next inspection date.
