Inspector notes: The walk-in cooler was observed held at an ambient temperature of 45 degrees Fahrenheit. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Food items within unit were evaluated and voluntarily disposed of during time of inspection. PIC turned down thermostat within unit during time of inspection. Establishment is not to store TCS foods within unit until an ambient temperature of 41 degrees Fahrenheit or less is maintained. Serviced arrived during time of inspection to assess unit.

Inspector notes: Lasagna, which was prepared in advance, was not cooled to 70 degrees Fahrenheit in 2 hours and then to 41 degrees Fahrenheit within 4 hours. Lasagna that was prepared last night was observed at temperatures ranging from 52-56 degrees Fahrenheit. Food items were voluntarily disposed of during time of inspection. Cooling logs were provided during time of inspection. Establishment is to record and validate cooling methods for food item.
