Inspector notes: Proper cooling methods were not used for time/temperature control for safety (TCS) foods. Large quantities of Recently Prepped Lobster Salad, weighing approximately 10 lbs., were placed in the refrigerator in 10" deep covered containers and observed at 55 degrees Fahrenheit. Lobster salad is to be placed in shallow containers no greater than four inches deep prior to be placed in deep covered containers.

Inspector notes: At the time of inspection, whole shell eggs were observed stored above raw seafood items. Except when combined as ingredients, raw animal foods are to be separated from each other such as beef, FISH, lamb, pork, and POULTRY during storage, preparation, holding, and display by arranging each type of FOOD in EQUIPMENT so that cross contamination of one type with another is prevented. (Whole Shell Eggs were moved to the bottom shelf at the time of inspection.)
