Cooked pasta was placed hot in the refrigerator in portion bags as well as cornbread stuffing in a covered container. Food items shall remain uncovered until cooled to 41 degrees or below. Food items were removed from portion bags and uncovered during the time of inspection to continue cooling.

Time/temperature control for safety (TCS) food must be maintained at 135 degrees Fahrenheit or above except during preparation, cooking, or cooling. Soup was placed into hot hold within 2 hours of inspection and was reheated to 165 degrees Fahrenheit or more during time of inspection.
