Inspector notes: Marinara sauce and French onion soup, which was previously cooked and cooled, was removed from refrigeration and placed directly into the steam table for hot holding. Time/temperature control for safety (TCS) food that is cooked, cooled, and reheated for hot holding must be reheated to 165 degrees Fahrenheit or above for 15 seconds. Food items were loaded into unit less than 2 hours prior to inspection and were reheated during time of inspection. Proper reheating procedures reviewed with PIC.
