Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Ambient temperature of the unit observed at 41 degrees F. Deli meats were being stored in fish buckets, blocking proper air flow. Deli meats were taken out of fish buckets and only small amounts will be stored in this unit so as not to block air flow.
