Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. All deli meat and cheese in prep room that was cut this morning was moved to walk-in cooler. All other food that was prepared on 12/1 and 12/2 was voluntarily disposed of at the time of inspection. Establishment is not to store any TCS foods in deli prep room until it is able to hold an ambient temperature of 41 DF or less.
