Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per PIC, service has been called to fix unit and is expected for today. Ice was placed over all food in unit at the time of inspection. No TCS foods are to be stored in unit unless they are over ice until unit can hold and ambient temperature of 41 DF or less. If unit is not able to be repaired today, then all TCS foods in unit must be moved to properly functioning refrigeration.
