Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per person in charge, items had been on the counter for about 1 hour. Items were relocated to a refrigeration unit to cool. Food must not be stored out of refrigeration.
