Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Moved mackerel to a 41 deg F Refrigerator, and disposed of cooked shrimp. THe produce refrigerator is not to be used for any items that require refrigeration.
