Inspector notes: The following food items were observed stored at improper cold-holding temperatures: - Large new, unwrapped portions of deli meat and cheeses were observed held at 43 - 47 degrees Fahrenheit in the deli display cooler. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Food items observed at 43 to 44 degrees Fahrenheit were moved to colder refrigeration, and food items observed at 45 and higher were voluntarily disposed of at the time of inspection. - Sliced tomato was observed held at the front service line cold well at 44 degrees Fahrenheit (sliced tomato observed stored in a shallow pan not allowing for tomato to be properly stored in the cold zone. (PIC made aware deeper pans necessary for proper cold holding temperature.)

Inspector notes: The deli display cooler was observed in need of repair adjustment: - The unit was observed to be maintaining an ambient temperature of 40 to 44 degrees Fahrenheit with food temperatures observed at 43-47 degrees Fahrenheit. - The left side door to the deli display cooler was observed to not seal properly in its track Use of unit for storage of time/temperature control for safety foods is to be discontinued until adjusted/repaired. Per the PIC, call for service to be made same day.
