Inspector notes: At the time of inspection, Raw beef was observed not stored properly to prevent cross-contamination with precooked chicken in the top cold hold area of the grill prep unit. Except when combined as ingredients, different types of raw animal foods must be separated from each other during storage by using separate equipment or arranging each type of food in equipment so that cross contamination of one type with another is prevented. Precooked chicken was moved behind the raw beef in the prep unit at the time of inspection.

Based on time chicken was prepared, the chicken was properly reheated to 165 degrees Fahrenheit at the time of inspection.
