Inspector notes: At the time of inspection, steak and fish fillet were observed stored in a freezer in Reduced Oxygen Packaging. Per the PIC, food items are Reduced Oxygen Packaged on site. Due to lacking an approved HACCP Plan for reduced oxygen packaging food items on site, PIC is to discontinue the process of reduced oxygen packaging any food items until written procedures are submitted to the RIDOH CFP and approved by a supervisor. ROP Seafood was disposed of by the PIC at the time of inspection. (Per the PIC, will no longer use ROP bags and will switch to click-seal bags)

Inspector notes: At the time of inspection, Reduced Oxygen Packaged Tuna was observed thawing in the Lower Level 2 Door Reach-In Cooler, in its intact packaging, at 44 degrees Fahrenheit. REDUCED OXYGEN PACKAGED FISH that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment prior to its thawing under refrigeration. The ROP Tuna was voluntarily disposed of at the time of inspection. Proper thawing of Reduced Oxygen Packaged Seafood items was reviewed at the time of inspection with the PIC.
