Inspector notes: Proper cooling methods were not used for time/temperature control for safety (TCS) foods. Per interview of PIC, steak and chicken was placed hot and wrapped in the refrigerator in containers greater than four inches deep. Chicken and steak were unwrapped and placed on sheet pans to finish cooling at the time of inspection. Proper cooling methods reviewed with PIC.

Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per interview of employee, food was prepared today. Foods were placed in walk-in cooler to blast chill. Deli display case was observed with no doors. TCS foods cannot be placed in this unit until internal temperatures of food can be maintained 41 degrees Fahrenheit or below.
