Inspector notes: Quipes and chulitos were observed held at 73-88 degrees Fahrenheit in the hot hold unit. Time/temperature control for safety (TCS) food must be maintained at 135 degrees Fahrenheit or above except during preparation, cooking, or cooling. Per person in charge, food had been placed in the hot hold unit about 1.5 hours after being cooked. Food was reheated to 176 and 171 degrees Fahrenheit and placed back in the hot hold unit during time of inspection. The ambient air temperature was observed at 155 degrees Fahrenheit. Per person in charge, food is placed in the hot hold unit before it is heated up. Establishment must preheat up the hot hold unit to 135 degrees Fahrenheit or above before placing food in it. Establishment must record food temperatures and send them to inspector daily.

Per person in charge, food had been placed in the hot hold unit about 1.5 hours after being cooked. Food was reheated to above 165 degrees Fahrenheit and placed back in the hot hold unit during time of inspection. The initial ambient air temperature was observed at 113 degrees Fahrenheit. Hot hold unit temperature was adjusted and observed at 218 degrees Fahrenheit after adjustment. Per person in charge, food is placed in the hot hold unit before it is heated up.
