Inspector notes: Lowboy #3 was observed held at 46 degrees Fahrenheit. Coffee milk was observed at 45 degrees F. Ice observed at the back of the unit. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. TCS products had been placed in this unit less than 2 hours prior to inspection and was moved to properly functioning unit. Walk-in cooler observed with a temperature of 44 degrees F. Food products in this unit observed at 44 degrees F. Service call was placed and is expected within the hour. Large bags of ice placed around TCS foods in this unit and walk-in freezer door was opened to cool down the walk-in cooler rapidly. Product observed at 40 degrees F at the end of inspection. Product temperatures must be carefully monitored and more ice added as needed until unit is maintaining a consistent temperature at/below 41 degrees F.
