Pressure indicator is to be replaced/adjusted to properly read 15-25 psi during the rinse cycle as required for proper high temp. sanitizing.

Inspector notes: At the time of inspection, Reduced Oxygen Packaged Lobster was observed to be thawing in refrigeration unit #MK9 at 37 degree Fahrenheit in its intact packaging. REDUCED OXYGEN PACKAGED FISH/SEAFOOD that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment prior to its thawing under refrigeration. Packages of ROP Lobster were cut open at the time of inspection.
