Inspector notes: Open air unit was observed held at 54 degrees Fahrenheit on the top shelf, and 35 degrees Fahrenheit on the bottom shelf. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. All TCS foods were placed in unit within 2 hours of inspection. All TCS foods were moved to the bottom shelf at the time of inspection. No TCS food is to be stored on the top shelf until it is able to hold an ambient temperature of 41 DF or below.
