Inspector notes: Proper cooling methods were not used for time/temperature control for safety (TCS) foods. Per interview of PIC, tomato soup was placed hot in the refrigerator in plastic containers greater than four inches deep. The tomato soup had been prepared that morning and were still within the cooling process. Food items were removed from plastic containers and placed into hotel pans and then placed into the freezer to rapidly cool.
