Raw pork belly was placed into walk-in cooler to blast chill (food was deemed safe due to competing organisms). Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Unit was taken out of service to hold foods that require refrigeration.
