Time/temperature control for safety (TCS) food must be maintained at 135 degrees Fahrenheit or above except during preparation, cooking, or cooling. Per Temp logs food was received above 135. The unit that had food out of temperature was the only unit without a cover. Cover was added to unit. Product was also double panned. Second pan was removed to allow product to be in more direct contact with steam. Lunch to be served shortly. Establishment to take food temps around 10:00 until re-inspection to ensure product is above 135.
