Inspector notes: Potatoes and beef was observed held at 103-120 degrees Fahrenheit on the tables in the cafeteria outside of proper hot-holding equipment. Time/temperature control for safety (TCS) food must be maintained at 135 degrees Fahrenheit or above except during preparation, cooking, or cooling. Per PIC, foods are put out on the tables for service under an hour prior to inspection. Upon evaluation, food was determined to be safe for immediate consumption. All foods not used for immediate consumption were placed in the oven to be reheated. Person in charge to create written procedures for hot-holding and serving. Procedures to be reviewed by inspector at next inspection.
