Inspector notes: Various prepped foods in the walk-in cooler were observed not marked with the date of preparation. Ready-to-eat time/temperature control for safety (TCS) foods prepared in the establishment and held for more than 24 hours must be marked with the date of preparation. PIC informed.

Inspector notes: The non-food contact surfaces of various equipment have an accumulation of dust, dirt, food residue, and other debris.

Inspector notes: The floors (by walk-in cooler, 3 bay sink, stairs to basement, and basement) and walls (especially by walk-in cooler) throughout the facility have an accumulation of soil residue and/or food debris. The physical facilities shall be cleaned as often as necessary to keep them clean.

Inspector notes: Insufficient lighting observed in the walk-in cooler. Sufficient light is needed to enable employees to perform certain functions such as reading labels; discerning the color of substances; identifying toxic materials; recognizing the condition of food, utensils, and supplies; and safely conducting general food establishment operations and clean-up. Properly distributed light makes the need for cleaning apparent by making accumulations of soil conspicuous.
