Fried rice and ribs observed placed hot in the walk-in cooler in containers greater than four inches deep and covered with food wrap over containers. -Fried rice observed at 100 degrees F. and ribs observed at 90 degrees F. Per interview of staff, TCS foods were prepared 1 hour prior to this inspection. -Proper cooling methods reviewed. Staff removed the covers from the fried rice and ribs during this inspection and placed foods onto shallow sheet pans to allow for rapid cooling in the walk-in cooler. -Establishment shall keep a cooling food temperature log for foods in the cooling process. -Cooling food temperature log shall be completed and provided to Inspector upon the next inspection date.
