Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Ice rail was refilled with ice and water. PIC to instruct all staff on how to set up ice baths for each station.

Rice was placed back in microwave to reheat to 165.
