Chlorine sanitizing solutions must be between 50-100 ppm. At the time of inspection, the tubing for the sanitizing cycle was adjusted within the chemical bottle, the dish machine was run several times to prime the sanitizing solution, and the sanitizer was retested and observed at 50-100ppm.

Inspector notes: Yogurt observed at 44-48 degrees Farenheit in a deep plastic container instead of a metal pan for the flip top prep unit for over 4 hours prior to visit. Shelf stable tuna that is left at room temperature that was made the day prior observed at 46 degrees Fahrenheit and left in the prep unit overnight. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. PIC voluntarily disposed of items.
