Inspector notes: Food items in the open air cooler we observed held at 41 to 46 degrees Fahrenheit. At the time of inspection, the refrigeration unit was observed to be in defrost at 59 degrees Fahrenheit. Per the PIC and Refrigeration Technician, the unit was in defrost for 45 minutes. Based on information and temperatures observed, food items were immediately moved to the walk-in cooler for rapid cooling. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling.

Inspector notes: At the time of inspection, the open air wall cooler unit was observed to be maintaining an ambient temperature of 59 degrees Fahrenheit down to 37 degrees Fahrenheit after defrost cycle completed. Food temperatures were observed to be maintained at 41 to 46 degrees Fahrenheit. Per the PIC and Refrigeration Technician, wall cooler unit defrost cycle is to be adjusted to better maintain proper cold holding temperatures throughout refrigeration and defrost cycles.
