Inspector notes: Mahi filet was observed thawing in the walk-in cooler with intact reduced oxygen packaging (ROP). Seafood food items shall be removed from their original packaging prior to thawing to allow the reintroduction of oxygen into the food item. Food items were observed at temperatures ranging from 28-32 degrees Fahrenheit and were removed from their original packaging during the time of inspection. Proper thawing methods discussed.
