Inspector notes: The quaternary ammonium concentration in the sanitizing solution of the 3-bay sink was (00) parts per million (ppm). According to the manufacturer's use directions, the concentration of the quaternary ammonium must be (200-400) ppm. Establishment had wrong Chemical hooked up to 3 bay sink. Chemical was switched out and retested (200ppm) Low Temp Chlorine sanatizer located at lower-level bar was reading (00) ppm. Chemical was observed to be out. Employee change sanatizer and it was retested (50 ppm) was observed after new btl was installed.

Ice machines upstairs were observed to have an accumulation of unidentifiable black substance. Ice machines need to be cleaned and cleaned on a frequent basis.
