Inspector notes: Food contact surfaces of equipment/utensils (can opener) were observed with an accumulation of food debris. The food contact surfaces of equipment must be clean to sight and touch. PIC relocated can opener to 3-bay sink to be washed, rinsed and sanitize.

Inspector notes: Proper cooling methods were not used for time/temperature control for safety (TCS) foods. Observed medium metal hotel pan of shredded pork, small pan of cooked shrimp, and various containers of sauce (mild, medium and jalapeno) were placed in the refrigerator with temps. ranging from 45 degrees Fahrenheit-50 degrees Fahrenheit). Per interview with PIC above food products were placed in 3 door North American refrigerator Tuesday night after being cooked, cooled and place in refrigerator lukewarm. PIC voluntary disposed of above food products.
