Cooked beans observed cooling in the walk-in cooler in a container greater than four inches deep. Cooked beans observed at 77-78 degrees F. Per interview of staff, beans were prepared 1 hour prior to this inspection. Proper cooling methods reviewed. -Staff portioned the beans into 2 separate containers to allow for rapid cooling in the walk-in cooler during this inspection. -Establishment shall keep a cooling food temperature log for foods in the cooling process. -Cooling food temperature log shall be completed and provided to Inspector upon the next inspection date.
