Inspector notes: Establishment is not following approved HACCP procedures and record keeping for the bone broths and packaging prepared foods for distribution. Establishment must follow approved procedures and record keeping. Per person in charge, establishment would like to change current HACCP plan. Establishment must submit HACCP plan changes for review/approval from the Rhode Island Department of Health Center For Food Protection.

Inspector notes: Food packaged in the food establishment are lacking label information (sub ingredients). Food packaged in a food establishment must be labeled with the common name of the food, a list of ingredients, allergen disclosure, the quantity of the contents, and the business name/address. Establishment must discontinue distribution of food until all the required information is placed on labels.

Inspector notes: Establishment is vacuum packaging cooked food without an approved HACCP plan. Before engaging in an activity that requires a HACCP PLAN, a PERMIT applicant or PERMIT HOLDER shall submit to the REGULATORY AUTHORITY for approval a properly prepared HACCP PLAN. Establishment must discontinue vacuum packaging cooked foods and submit a HACCP plan to vacuum package cooked foods to the Rhode Island Department of Health Center For Food Protection for review/approval. All vacuum packaged cooked foods were voluntarily disposed of (see attached disposal form).
