Inspector notes: Vegetable prep unit was observed held at 47 degrees Fahrenheit. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Noodles in unit were 47 degrees, voluntarily disposed of. Vegetables had just finished being prepped and were moved to walk in cooler until unit is repaired.

Inspector notes: Proper cooling methods were not used for time/temperature control for safety (TCS) foods. Per interview of staff, noodles was placed hot in the refrigerator in containers greater than four inches deep. Noodles were prepared two hours prior and were moved to freezer to rapid cool.

Ice machine in not to be used until it is washed rinsed and sanitized.
