Inspector notes: -Pomodoro sauce observed in 5-gallon containers were at 45-49 degrees Fahrenheit during time of inspection. - Sauces, which were prepared 1 day in advance, were not cooled to 70 degrees Fahrenheit in 2 hours and then to 41 degrees Fahrenheit within 4 hours. - Proper cooling methods reviewed. Staff voluntarily disposed of sauces at time of this inspection. - Establishment shall continue to keep cooling log. Cooling log shall be completed and provided to inspector weekly for a month. *Thermometers were calibrated during this inspection and observed at 32 degrees Fahrenheit.
