Inspector notes: Rice and soup were observed between 110-125 degrees Fahrenheit on the counter. Time/temperature control for safety (TCS) food must be maintained at 135 degrees Fahrenheit or above except during preparation, cooking, or cooling. Per PIC, food was just cooked and were waiting to place food in hot hold unit until food in unit needed to be replaced. Food was reheated to over 165 DF and placed in hot hold unit at the time of inspection.
