Inspector notes: Salad mix was observed held at 47 degrees Fahrenheit in the overhead salad refrigeration unit. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per kitchen staff, food items were loaded into unit less than 2 hours prior to inspection and were moved to walk-in cooler to rapidly cool. Cold hold unit observed held at an ambient temperature of 43 degrees Fahrenheit. Staff adjusted unit during time of inspection and unit was observed at 39 degrees Fahrenheit.
