Time/temperature control for safety (TCS) food that is cooked, cooled, and reheated for hot holding must be reheated to 165 degrees Fahrenheit or above for 15 seconds. Queso was observed held at 82 degrees Fahrenheit during time of inspection. Per person in charge, queso was placed in the hot hold unit about 3 hours prior to inspection. Queso was voluntarily disposed of (see attached disposal form). Proper reheating procedures were reviewed with the person in charge at time of inspection.
