Inspector notes: Chicken soup, which was prepared in advance, was not cooled to 70 degrees Fahrenheit in 2 hours and then to 41 degrees Fahrenheit within 4 hours. Per PIC, food items were prepared the following evening. Food items were observed tightly covered with plastic wrap and 2 pans were stacked on-top of each other and observed held at 53 degrees Fahrenheit. Food items were voluntarily disposed of during the time of inspection.
