Inspector notes: Food was observed held at 43-44 degrees Fahrenheit in the salad bar. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per person in charge, food had been in the salad bar for about an hour. Food was relocated to another refrigeration unit to cool. The ambient air temperature was observed at 47 degrees Fahrenheit during time of inspection. Salad bar was observed open with pans missing. Salad bar must not be left open to prevent cold air from exiting the unit. An employee placed pans in the unit and closed it during time of inspection. The salad bar unit ambient air temperature dropped to 40 degrees Fahrenheit during time of inspection.
