Inspector notes: Raw lobster tails were observed thawed in their original intact reduced oxygen packaging (ROP). Seafood packaged in ROP packaging shall be removed from its original packaging prior to thawing to allow the reintroduction of oxygen into the food item. Lobster tails were observed at temperature ranging from 35-37 degrees Fahrenheit and were removed from their original packaging during the time of inspection. Proper thawing procedures reviewed with PIC during time of inspection.
