Inspector notes: -Slicer has an accumulation of food residue on the inner food contact surfaces below the blade guard and is not being dissassembled, washed, rinsed and sanitized at least every 4 hours. The person in charge took apart the slicer during the inspection and placed the removable parts in the 3 bay sink to be properly washed, rinsed, sanitized, and air dried. The inspector instructed him to clean in place the rest of the slicer to remove the encrusted food debris observed once the the blade guard was removed. -The quaternary ammonium concentration in the sanitizing solution of the 3-bay warewash sink was 0 ppm, rather than 150 - 400 ppm as stated on the manufacturer's use directions. The 3 bay sink was set up to wash and rinse only. The third basin was empty at the beginning of the inspection. The person in charge filled the third basin with sanitizer solution during the inspection. The solution was tested in the desired range of 150 - 400 ppm.
